I don&#8217;t actually remember when I started baking, but I was young. I will be honest, I didn&#8217;t always love it. I saw it as necessity or duty. I have worked in many different parts of the food service industry. About twelve years ago, my attitude regarding baking changed and changed radically at a critical juncture in my life.<\/p>\n\n\n\n<p>The cafe I created, developed, and managed went out of business. I stopped making food and beverages for money.<\/p>\n\n\n\n<p>Whenever I show up to a gathering with my latest creations, I get the inevitable, &#8220;You should start your own bakery\/catering service\/boutique.&#8221; My response to this comes from my old martial arts instructor and it goes something like, &#8220;When people give you money for something, they feel like they are in control and they will make demands.&#8221;<\/p>\n\n\n\n<p>Sorry, but meeting people&#8217;s demands does not spark joy so I Marie Kondo&#8217;ed that the hell out of my life. I like to control what I am making, from the concept\/recipe to the ingredients, preparation, and display.<\/p>\n\n\n\n<p>Now baking sparks joy, so it stays.<\/p>\n\n\n\n<p>If you&#8217;re a new baker, I hope to be of some help. If you&#8217;re an experienced baker, I hope to provide you with amusement.
